Artichoke + goddess dressing = delish lunchtime snack! Excellent for days when you don’t have time to cook, but you do have time to eat:
Boil a pot of water with about a quarter of a cup of vinegar (apple cider or rice wine is best, but if you don’t have any, that’s ok too). While it’s boiling, wash the artichoke and cut an inch off the stem. Put the artichoke in the boiling water. Leave it there for 45-60 minutes, or until the lower leaves come off easily. Take out of water.
